Position Overview:
The Chef de Partie (CDP) is a key member of the kitchen team, responsible for managing a specific section of the kitchen and ensuring that dishes are prepared to the highest standard. This role requires a skilled and organized chef who can work efficiently under pressure and contribute to the overall success of the kitchen operation.
Key Responsibilities:
• Section Management:
o Take full responsibility for a specific section of the kitchen (e.g., grill, sauté, pastry), ensuring that all dishes are prepared and presented according to Aja’s quality standards.
o Coordinate with other kitchen sections to ensure smooth and efficient service, particularly during peak times.
o Oversee the mise en place preparation for your section, ensuring that all ingredients are prepped and ready for service.
o Monitor portion control, waste management, and stock levels within your section.
• Cooking & Presentation:
o Prepare and cook dishes according to the menu specifications, ensuring consistency in flavor, texture, and presentation.
o Maintain high standards of cleanliness and organization in your work area, adhering to food safety and hygiene regulations.
o Assist in the development of new dishes and menu items, providing input based on your expertise and creativity.
o Ensure that all dishes leaving your section are presented attractively and are of the highest quality.
• Team Collaboration:
o Work closely with the Sous Chef and Head Chef to ensure that the kitchen operates smoothly and efficiently.
o Assist in training junior kitchen staff, providing guidance on cooking techniques, kitchen organization, and food safety.
o Communicate effectively with the front-of-house team to accommodate special requests and dietary requirements.
o Participate in regular kitchen meetings, offering feedback and suggestions for continuous improvement.
• Quality Control:
o Ensure that all ingredients used in your section are fresh, properly stored, and of high quality.
o Conduct regular checks on the quality and presentation of dishes, making adjustments as necessary to maintain consistency.
o Monitor cooking times and methods to ensure that dishes are cooked to perfection and served promptly.
• Compliance & Safety:
o Adhere to all food safety and hygiene regulations, including proper handling, storage, and labeling of ingredients.
o Maintain a clean and organized workstation, ensuring that all equipment is used safely and correctly.
o Report any kitchen equipment issues to the Sous Chef or Head Chef and assist in maintaining kitchen equipment as needed.
o Stay up-to-date with industry trends and kitchen best practices, incorporating new techniques into your work.
Qualifications:
• Proven experience as a Chef de Partie or similar role in a high-quality kitchen, preferably with a focus on healthy or sustainable cuisine.
• Culinary diploma or equivalent qualification from a recognized culinary school.
• Strong knowledge of food safety, sanitation, and hygiene practices.
• Ability to work efficiently under pressure and in a fast-paced environment.
• Excellent attention to detail and commitment to producing high-quality dishes.
• Strong organizational and time management skills.
• Ability to work well in a team and communicate effectively with colleagues.
