Guided by Cheffe-Founder Vicky Lau and Head Chef Choi Ming Fai, the new menus offer a simplified yet refined selection of 5- and 6-course meals that highlight the restaurant’s dedication to local ingredients and sustainability.
The Characters of Soy: A French x Chinese Fusion
MORA’s latest menus, named CHARACTERS OF SOY, continue to explore the versatile role of soy in French-Chinese fusion cuisine. Open for dinner from Tuesday to Saturday and lunch on Fridays and Saturdays, MORA presents dishes crafted from fresh, locally sourced ingredients, celebrating the work of regional artisans and producers. Each course is a testament to the restaurant’s ongoing commitment to environmental sustainability and culinary excellence.
Autumn Lunch Menu
The new 5-course lunch menu, priced at HK$580+10%, showcases house-made soy products in innovative dishes, such as:
- Bean Curd Tartlet with soy ricotta and baby shrimp
- Cold Lobster Noodle (+HK$98) with Sakura shrimp in soymilk lobster bouillon
- Warm Hokkaido Scallop (+HK$138) with fermented tofu clam jus
Main course options include the Three Yellow Chicken Roulade with smoked hard tofu and seven-spice chicken or the Crispy Threadfin with braised soybean and chicken fat soy emulsion. To finish, guests are treated to MORA’s signature Mapo Tofu Rice and the Tofu Pudding with black rice soy ice cream and fig compote.
Autumn Dinner Menu
For dinner, the 6-course menu, priced at HK$980+10%, offers evening-exclusive creations such as:
- Creamy Tofu with razor clam, avocado, coffee oil, and mustard herbs
- Deep-Fried Tofu with squid, sesame sauce, pine nuts, and radish
- Camouflage Grouper Tofu Skin Roulade (+HK$138) with herb sauce
- Roasted Pigeon with smoked hard tofu and seven-spice pigeon jus
The dinner ends with the same sweet indulgence as the lunch menu, featuring the Tofu Pudding with black rice soy ice cream and fig compote.
